chicken dish idea for teacher appreciation lunch

Hello. We are having a teacher appreciation lunch at my daughter's preschool. There's no theme -- you just sign up for entree, side or dessert. The sign-up sheet seems overloaded with salad dishes and grain-based sides. I was thinking of doing a strawberry cake and a chicken entree. Any ideas for the chicken dish (preferably a dish with no starch). Bonus for make-ahead dishes that can be easily heated up at the school. Thanks!!

As a consumer of many an teacher appreciation lunch or breakfast, I can tell you that a dish will be appreciated most if it is 1) not heavy---afternoons can be long; 2) easy to eat (no drippy sauces); 3) quickly consumed--school lunch hours are not designed for fine dining. Any sort of room temperature finger food, like the dry-rub chicken mentioned above (which I haven't tried myself), is a plus. It's also a nice idea if leftovers can be offered for teachers to take home for dinner!

I love Smitten Kitchen's Dry-Rub Chicken. It's so delicious, not too difficult to make and feels really special. It also tastes just about as good cold as it does hot.

For Chinese-style chicken, I recommend Red-Cooked Chicken which can and should be made a day ahead. Here is a slow cooker recipe,
