I have made shad and shad roe as part of a spring feast. James Beard, I think, supplied the recipe or cooking idea. Very simple ... sautee in butter, squeeze over some lemon. Delicious and spring feeling with a salad of young greens.

Yes, that was my go-to preparation. I did dust a little wondra flour with S&P and it was delicious -- but not remarkable. Thanks.
