I spent a good deal of time making beef stock and when it was all done had a slight bitter taste. What did i do wrong? Any way to correct?

Close to the end of the roasting time, I smear the bones with the contents of a small can of tomato paste, then continue roasting until it has browned well. It deepens the color of the stock and also "sweetens" it.

Onion also a bulb of roasted garlic- maybe where i went wrong although i removed soon after
