I have a question about the recipe "Sweet and Savory Overnight Roast Pork" from Merrill Stubbs. Does the skin stay on (so skin and fat) on top?

If your pork butt comes with the skin on, you should remove it.
We cooked it with the fat on top as it imparted amazing flavor. Keep it on
