I have a question about the recipe "One Pot Kale and Quinoa Pilaf" from deensiebat. Does this hold up well over a few days? I'd like to make it for my lunches, but not sure it will still be good in a day or two.

Whenever I make dishes like this, I make extra for leftovers. You may need to moisten it a bit when reheating, but I think it will make a good leftover meal.
