main dish suggestions

I'm planning to make a fresh corn polenta. Looking for main course suggestions, preferably some type of meat that is summery and easy to prepare. Open to fish and chicken, too.

Let's think healthy here. I would do something like salmon, preferably wild. So easy to prepare - practically effortless if you have the right equipment - like a great stainless steel fish poacher. Salmon - if done the right way - infused with bay leaves and lemon juice and black peppers while being poached - is elegant and delicious. It can be made a day ahead and refrigerated, served chilled or it can be done an hour before the guests arrive and served tantalizingly hot. Either way - it is delightful. You can try my "sans souci" salmon.

Maybe some grilled steak with some kind of fresh chopped tomato salsa on top?

was also thinking of something along the lines of shrimp and grits. or a whole sea bass, stuffed with fresh herbs and grilled or baked in a salt crust with a fresh tomato salad/salsa on the side.

You could add some greens to complete the dish.
