Are you asking how to can your own sardines (if so, I have no clue,) or for dishes that use canned sardines? If the latter, Pasta con Sarde is a fantastic classic Sicilian pasta - made with sardines, fennel, currants or raisins, garlic, pine nuts, tomatoes...there are lots of good recipes out there - Mario Batali has one that's probably online somewhere.
