Thanks Susan! I was at the store and ended up getting a pretty small head of organic cabbage. I used it all and we really enjoyed the slaw.

I wouldn't worry too much. Just go for a medium head or 1.5-2 cups cabbage. You can start with less and add more if you'd like.
