A question about a recipe: Oatmeal Cream Pies

I have a question about the recipe "Oatmeal Cream Pies" from sarah kieffer | the vanilla bean blog. Is there anything I can sub for the heavy cream? I know these are CREAM pies...but do you think milk or even coconut cream would work (anything i can find lactose free) ?

Full fat coconut milk would work. The good stuff in the cans which are coconut and water only. The stuff in the cartons are full of additives. You can make a coconut curry with the rest of the can since you only need 3 TBS.
