A question about a recipe: Martha Stewart's Macaroni and Cheese

I have a question about the recipe "Martha Stewart's Macaroni and Cheese" from Genius Recipes. Want to make this for a gaggle of kids this weekend! Can I use all medium cheddar and some parm??Velveeta maybe? Pretty sure the Gruyere/sharp cheese would be a no with the kids!

The sharpness of Gruyere does not really show up in mac and cheese, I made it for the little people many times with no objections. But if you want to be on the safe side you can sub it with something milder, swiss or Monterey Jack for example.

John Legend uses mild cheddar and jack. :)

We only ever use cheddar cheese for macaroni and cheese, but it has to be a good one. Try and use a sharp cheddar and it will be perfect. Currently we use Colliers Welsh cheddar which has serious yum!

just watched a great short video of a chef making no bake mac & cheese using cheddar and mascarpone on the bluestarcooking.com website.
