Is '00' flour a possible substitute for Wondra in gravy

Actually, Wonder flour is very low protein and has been cooked, dehydrated and ground so it's instantized. I have read you can mimic wonder flour by toasting, grinding it in a spice grinder and adding a little cornstarch. Since you have 00, maybe you can toast it in a dry pan and mix with a little cornstarch. Or just go with the 00 and whisk well. You can always strain it if you end up with lumps. I probably would follow a recipe that calls for regular flour since the method will be different.

00 flour and Wondra are both finely ground flours. Since gravies are pretty forgiving so I would definitely give it a shot. Start by adding a little amount of the 00 flour, whisking as you go. You can always add more, but since you're using a substitute flour here I would start slow. Best of luck!
