I have a question about the recipe "Mashed Potato Cakes with Broccoli and Cheese" from Merrill Stubbs. Could these be frozen after frying for later use? Thanks, nt

Yes, definitely. When you defrost them, do it in the oven at a high temperature (like 435) so they become crispy on the outside.

Yes, definitely. Agree with Liza's Kitchen...these are a variation on latkes, which always freeze well.

I would think they might not be as crispy when you reheat them but they will probably taste fine.
