I have a question about the recipe "Roll-Out Sugar Cookies" from erinmcdowell. Do you think it would work to freeze these cookies, pre-cut, and then bake them for a bit longer?

I can't say that I've tried that with this recipe, but I don't see why not.
I have done that with other sugar cookie cutouts and it has worked just fine. I have not tried this particular recipe, though.
