Orange muscat. I think that the aroma of orange rind and citruses in it would go beautifully with honey and thyme.

Maybe a rose, or prosecco, or a fruity beaujolais. In any case, honey/feta/thyme evokes a lovely bit of summer.

I would go with a dry rose, or champagne!

Unless the Champagne or rose is very sweet, the honey will turn the taste unpleasantly sour.
