I have a question about the recipe "Extra Tender Meatballs" from Merrill Stubbs. Can I substitute an alternative flour say almond meal or coconut flour and if so how much?

Do you mean instead of the breadcrumbs? Is it gluten that you are trying to avoid? You could use a gluten free bread crumb if thats the case. I once subbed barley flour for breadcrumbs in a chicken loaf and it was ok but a bit gummy a different texture.

Almond meal (not flour) would be a good sub. Coconut flour absorbs way too much liquid.
