I have a question about the recipe "Momofuku's Pork Buns" from Merrill Stubbs. Can I substitutes the pork belly with brisket?
I have had brisket buns at Momofuku. I believe they used horseradish sauce in place of the hoisin and perhaps added some pickled red onion. Can't remember but it was really good!
Horseradish sauce as in the cream style right? Thank you anyway for the response
I can't remember, it could have been a cream sauce or horseradish mayo.
Thank you keel
