I have to make egg whites omellets for my husband who is on a diet. Any ideas to use the egg yolks that are left?

In the summer--oh hell, in winter too-- I use them to make ice cream bases. But Alice medrich's lemon curd (which can be any citrus, really) on this site freezes beautifully too.

If you like to make your own pasta there is nothing more decadent than egg yolk pasta.

Freeze them in ice cube trays, you will find uses!
