Check these hippie bars out - she uses nut butter and coconut oil, maybe you could do something similar?

The seed slice is a healthy bar, the ingredients are oats, pumpkins seeds, sunflower seeds, linseed seeds, wheat germ and raisins. For sweetening and holding them together:honey, sugar and melted butter is used, which are simmer together and add then to the dry ingredients. Then the mixture is put on a baking tray and into the fridge and that's it. No baking involved but quite a lot butter! So I am trying to find a good substitute for it.

Agree with Annie suggestions. Two more...just make with the butter , sugar and honey but wiith less of them: start with 1/2 amt recipe recommends, mix, chill, see if bar holds together. If not, add more. Switching to dame amt of nut butter and coconut oil may slightly change the fat profile, but a lot of fat in those too. Another substitute - tahini paste.
