Ikea's Rhubarb concentrate for Cocktails?

Im sure Im not the first to try this.. I was thinking something summery with Gin and mint maybe? Any thoughts or ideas?

Its a "drink concentrate"- Havent opened it yet but I imagine its close to a syrup. Thanks:)

So I opened the bottle up last night and made some simple Rhubarb martinis with Gin and fresh lime juice- 2 oz Gin 2 oz Rhubarb concentrate 1 oz lime. It was sweeter than I expected but all my guests liked it. I prefer a less sweet drink so I wonder if next time I will use less concentrate and maybe a splash of another kind of juice like cranberry or something.

Bummer that it was on the sweeter side. Maybe a twist on a French 75 using the rhubarb in place of the sugar? Using a dry sparking wine in addition to gin might help curb the sweetness.

Tried this with a new local gin (Beltsville, MD). It’s a great drink, I can handle the sweet, but not by much. It would be nice with a fizz of some sort.
