Easy, simple hollandaise recipe?

My Dad's favorite breakfast is eggs benedict. A lot of hollandaise recipes involve a lot of whisking/double boilers, etc...Does anyone have a simple recipe that is equally delicious?

I love Hollandaise Sauce and make it from scatch. But, a little secret I learned from my best driend when she ran a B&B in Newport RI was Use the Knorr's Hollandaise packet. Use milk instead of water and add fresh lemon juice to taste when it thickens. It's fabulous and super easy!!

A Hollandaise is an emulsion, which means that you will have to whisk it create the texture and thickness you desire.
