Korean side dishes

I'm making the Korean short ribs from the recipe posted a few days ago...now i'm at a loss for side dishes to go with Korean ribs. I think i'll make spicy & saucy rice cakes but if i could have a vegetable as well that would help. without resorting to kimchi can anyone give me a good korean veggie side dish?

Spicy cucumber salad, gimbap, Edamame, quick pickled vegetables like carrots and radishes, soy sauteed mushrooms or zucchini strands.

Well, kimchi is absolutely obligatory in a Korean household, at every meal. There are dozens of kinds that can be quite unique and good, fresh varieties can be found at specialty and Asian markets. Other than that, I second your idea of tteokbokki....some of my favorite Korean banchan are jeon (veggie and seafood pancakes), stirfried shishito peppers, stirred glass noodles (japchae), steamed eggplant in sauce (Gaji-namul), mapa tofu, and soybean sprouts with sesame (Kongnamul-muchim).

When I make bulgogi, I usually serve it with the following side dishes- fresh cucumber kimchi, mirin glazed mushrooms, sauteed spinach. You can find the side dishes (banchan) within this recipe I posted.
