Absolutely! I use the corn/potato starch trick with tofu all the time to ensure max crispiness when baking or frying. Veg this up!

I am tempted to suggest seitan. It might have more of a crunch and bite to it...

I mind went straight to tofu because that's what you find on typical Chinese takeout menus, but oooooh, I like the idea of seitan!
