Is it too early to make the green bean casserole today ? Should I bake the mini corn muffins today or tomorrow ?

These muffins (https://food52.com/recipes/32796-corn-muffins) will keep for a few days in an airtight container, so I'd make them now and store them until you eat.

You could assemble this green bean casserole today, but leave the shallots off for now and add them just before you bake it tomorrow. https://food52.com/recipes/7875-homemade-green-bean-casserole

Also, if you're going to let the green bean casserole sit for a day before baking it, only blanch the green beans until just crisp so they don't get soggy while they wait.
