A question about a recipe: New England Spider Cake

I have a question about the recipe "New England Spider Cake" from Sarah Jampel. I'm trying to ask if Unsweetend Almond Milk can be used

I think it will because according to a quick Google search, it does curdle when acid such as vinegar as added. It says use one TBS of vinegar to each cup of milk which is more than the cake recipe calls for, but the milk in the recipe only slightly curdles.
