I have a question about the recipe "Chicken Sausage, Black Bean & Goat Cheese Empanada" from bethmichelle. What kind of chicken sausage? Also how much? Sausages come in many sizes and weights. Thanks for your help!

the black beans throw it into the southwest/mexican camp so i would advise a sausage that has spices (cumin, chiles, red pepper, pimenton...)from those areas, or those places in the name of the sausage i.e. Southwest Chicken Sausage. Otherwise, a plain sausage w/ no herbs or sugar.
