I need to cook (these are all frozen) a potato @ 350 for 40 minutes and a salmon fillet @400 for 21 minutes and want them ready at same time. Ideas?

Do you mean a potato dish or a whole potato (not sure why a whole potato would be frozen)? For what it is worth, I think 400 is too hot and 21 minutes probably too long for a salmon filet, and whole potatoes and most potato dishes can easily be cooked at higher than 350. I'd recommend this: if possible, defrost both items in microwave, then start potato in the 375 degree preheated oven, adding salmon only for last 15 minutes or so.

This question may benefit from a little additional info... is this a frozen, pre-prepared potato dish, or are you just trying to bake a potato?
For the latter situation, microwaves work remarkably well. Just prick the potato all over and microwave 3-5 minutes on each side.
For the former, you may also be able to get away with cooking it basically through in the microwave, then finishing it off in the 400 degree oven for a nice, oven-browned top.
Generally, potatoes and microwaves play quite nicely together.

Ok Jeff, I checked the Omaha Steaks website and it does look like most of their potato dishes have microwave instructions:

If you have the twice-baked potatoes I would still recommend finishing them for ~5 minutes or so in the oven with the salmon so that their tops can get slightly browned.

Is it a frozen potato or is it a potato product? You can bake a potato at 400 degrees with no problem. If it is a potato product I would start it at 350 and at about 15 minutes in, raise the temperature and put in the salmon fillet. Watch them both, and test for doneness cover with foil if the potatoes are getting too brown. The fish should be flaky but still moist. Good luck
