Diced mushrooms--include some dried, reconstituted ones--sautéed until all their liquid is evaporated and they start to brown. I would do baby bellas or wild variety rather than white ones.

Eggplant would appear to be a reasonable substitution. I would cut into chunks, sauté in olive oil in order to get some caramelization and additional flavor complexity.
