I have a question about the recipe "Timpano" from Camille Becerra. Any answer to this question, I am wondering the same. Any suggestions for a good meat substitute to make a vegetarian version? I'd prefer not to use soy meat - maybe eggplant...? Thanks

Eggplant would appear to be a reasonable substitution. I would cut into chunks, sauté in olive oil in order to get some caramelization and additional flavor complexity.

Diced mushrooms--include some dried, reconstituted ones--sautéed until all their liquid is evaporated and they start to brown. I would do baby bellas or wild variety rather than white ones.
