I have a question about the recipe "Judy Hesser’s Oven-Fried Chicken" from Genius Recipes. Is there a way to do this using a gluten free or low carb flour?

I haven't tried it, but another commenter asked about rice flour, which I think might work well and make a nice crisp crust.
I used pilsbury gf flour and it was delicious!
I recently ran across a recipe that called for using tapioca flour on chicken. It did specify not to use a very heavy hand with it.
