turkey for thanksgiving and sides

is there a recipe for roasted turkey using dried herbs? how do i make the herbs stick to the skin. is it better to use softened butter or cold butter under the skin. also, my side dishes have always been the same for many years (boiled Brussels sprouts, boiled string beans, bread stuffing, mashed potatoes). any new ideas?

Sounds like you need a Thanksgiving intervention! I use softened butter and fresh herbs under the skin and dry brine the turkey the night before. the brining is optional. For potatoes I like Yukon gold mashed sometimes adding some Gruyere and ham. this year I am doing domino potatoes, they were a big hit for Christmas last year, here is Mallmann's receipe : https://food52.com/recipes/20592-francis-mallmann-s-potato-dominoes
For veggies, definitely roast your brussel sprouts, there are many options on this site as caninechef mentions., try roasted carrots too. Lastly , make a nice chopped green salad and add apples or mandarin wedges and maybe some walnuts. The salad will brighten up the heavy meal.
Every year it's good to try at least one new dish, it keeps the crowd interested, Good Luck!

It is fun to play with but you might find it too ambitious to totally revise all your dishes at once. But check out some of the options they offer and maybe try one or 2. They have some great sounding Brussels sprout options and I think there are also green bean recipes. Have fun!
