A question about a recipe: Orange-Fennel Mostarda

I have a question about the recipe "Orange-Fennel Mostarda" from Elizabeth Rex. I made this tonight, and it tastes a bit too bitter. I get the sweet tones, but don't really taste the vinegar tones. How can I adjust it now that it's cooked down (with the zest added) to balance it out?

Maybe add a tablespoon or two of vinegar whose flavor you like, but don't cook it again.
