I have a question about the recipe "Quick Pickled Apples" from hardlikearmour. I might not be able to source pink ladies, what would be the best substitue in your opinion?

something crisp and slightly tart... Sundowner is another speciality variety. if not, maybe braeburns?

Fuji apples would probably substitute reasonably well. I'd go with a small variety with some pink in the color.
