I have a question about the recipe "Orange Cardamom Roasted Sweet Potatoes" from nannydeb. Would it ruin it to keep the skins on? I love the skins!

Should be fine! I almost never peel my sweet potatoes.

I'm sure it would be fine if you're used to eating the skins. They may get loose and fall off & maybe get crunchy? Sounds good!
