I have a question about the recipe "Flaky Baked Samosas " from Kendra Vaculin. 2 big carrots? How about a weight or cup measurement.

Probably about a half pound, but only the author knows for sure. Good luck with the "1/4c chopped cilantro (or mint)"- a far more critical and mysterious measurement.

Usually in samosa recipes, the potato is the main ingredient and carrots and peas are a little bit less. So I would use judgment/personal preference when measuring out the chopped carrots and peas.
