I am making mac & cheese, and I mixed the milk and the flour/butter mixture too quickly, and now the sauce is too thick/gloopy. Help! Can we fix this?

Its easier to thin out a too-thick sauce by just adding a bit more liquid....to thicken a runny sauce, you're heading into slurry territory.
