I have a question about the recipe "Banana Cake with Penuche Frosting" from Lindsay-Jean Hard. Will this make enough frosting for 2 dozen cupcakes or should I double the frosting recipe?
I'm not sure, I've never used it for cupcakes before! I would probably do a batch in a half to be safe. When used on the cake, it's a very thin layer of frosting because it's very sweet, likewise, I wouldn't recommend mounding this frosting up on cupcakes.
ALWAYS double the frosting...there's nothing sadder than underfrosted cupcakes!
