I have a question about the recipe "Andrea Nguyen's Vegan "Chicken" Phở" from Genius Recipes. Is there a good substitute for nutritional yeast?
A few suggestions, pending definitive word from Ms Nguyen.
If you don't have nutritional yeast on hand, the recipe (broth and bowl) has lots of both umami and protein, so if you omit it the small amount of nutritional yeast won't be much missed.
If you don't like it or can't get it, alternatives include
* vegan: brewer's yeast or yeast extract
* dairy: grated Parmesan or cheddar cheese (but if you use one of these, use it as garnish just before serving).
