I make yesterday apple pie dough and kept in Fridg 24 hrs when take it out of Fridg today it is very hard!! Shall I leave it 1 hr to take room temp.?

Do let it sit on the counter for a while.  You want it to be still cold but soft enough to work with.  It won't take an hour.
