When I roast lemon for cous cous do I peel it before i chop it to put in the dish?

Think of it this way: if you were using a preserved lemon, you'd get a lot of advice to just use the peel and throw away the rest!

Are you roasting slices of lemon? If so, no need to peel -- the peel has some great flavor in it.
