Do you have weight measurements for the flour (I prefer to weigh by flour)?

King Arthur Flour lists 120 grams per cup of bread flour, so the recipe is going to have approximately 640 g. bread flour (600 in the bread and 40 in the paste). Start there and alter if necessary.
