Can I use canned artichoke for this recipe? A

never tried using canned artichokes (since they're already cooked and hence bring in extra liquid into the mix, however much you drain & dry it) ) but if you do try it, I'd suggest increasing the chickpea flour amount slightly and cut down on the ricotta.
