A question about a recipe: Mini Pistachio-Vanilla Cake

I have a question about the recipe "Mini Pistachio-Vanilla Cake" from Erin McDowell. Looking for some input on how to scale this to do it as a 2 layer cake in more traditional 8 or 9 inch cake pans? Suggestions on doubling or multiplying the ingredients by a different factor? and adjusting baking time? Thanks!

Oops - answered this at the question about "5 spice cinnamon rolls"...
But I think doubling the original recipe (baked in a quarter sheet pan) would give you 2 layer of 8" round cake.
