How do I get my soufflé to rise equally? It only rises on one side, creating a slant.

Are you using a convection oven? The airflow can push delicate baked goods over and make them slant!

Right before you put it into the oven, run a knife along the perimeter of the surface, about 1/2 inch from the inner walls of the ramekins and about 1/2 inch deep. This creates a so-called crown, and minimizes the slant.

If the mixture is spread evenly the only thing I would think of is possibly your oven isn’t heating evenly.
