A question about a recipe: Oliver Clark's Meatloaf

I have a question about the recipe "Oliver Clark's Meatloaf" from Merrill Stubbs. Can I skip the breadcrumbs? I often omit them from meatball recipes and have never had a problem. My husband doesn't eat bread (it's a starch/carb issue, not a gluten one).

Shouldn't be a problem; it would make the texture a bit heavier. You could sub something else- oatmeal works well, or grated cooked potato,but you still get starch. You might try grated zucchini, which works well too, but all of these would make a noticeable (though not bad) change in the finished product.
