I would start with 4 ounces of spätzle per person. The sauce makes this a pretty rich dish.
Depending on what else would be at the same meal, I would likely drop this down to 3 ounces per serving. I'd never serve it as an entrée course, in the same way that I don't eat pasta as a main.
Admittedly I am not a fan of gutbuster portions, but that's just me...
The folks at your dinner table might have other opinions so use your best judgment and decide for yourself how big of a heap you think they would want. No one here knows who sits at our dinner tables except ourselves.
