You could use about any not too soft greens, something like swiss chard, or even flat leaf kale cut thin. Or just omit it and increase the amount of bok choy
Swiss chard is genetically very similar to beet greens, so they'd be a perfect substitute. The younger the chard, the more it will resemble tender beet greens.
