Too much Pomegranate molasses

I purchased a bottle for a recipe, used some, then realized I had an open bottle on the fridge. So now I have two almost full bottles. What would you use this for? (Vegan ideas a plus.)

Side question: does this keep forever? Because then I don’t really have anything to worry about!

Muhamara - Syrian sauce, main flavors walnut & pomegranate
Cheesecake
Drinks - with club soda, mineral water or in cocktails
In salad dressing, esp for fruit salads
On pancakes or waffles
As part of a fruit compote or banana split
Keeps- about a year in fridge
