How long to cook 27 lb. unstuffed turkey? I am finding times from 3.5 hours to 5.5 hours...how to plan???

Dry brine. Ok! Better get it in the oven for the next 6.75 hours!

Bee, did you brine your turkey? That will also affect cooking time.

Better yet if you have a thermometer, go by the temperature of the thickest part of the thigh - it should be 165F when done.

Agree with both Leith & Stephanie.
One other tip - if you have the knife and the bravery to do it, spatchcock your turkey. It will lay flat in the pan and cook more evenly (less chance of breast drying out or legs being underdone).

325 oven, 15 minutes per pound so 6.75 hours.
