My pumpkin pie is cooked and cooled but it's still too soft in the center. Should I re-bake it for 10 minutes now?

Hi slirpa, if it's fully cool, it will probably take more than 10 minutes to catch back up. I'd say you have 2 options here—you could keep baking it at a low temperature (around 325F) until the center looks wobbly but not sloshy and then take it out. (Watch it closely for this so it doesn't overbake at the edges.) Or you could consider rebranding it as a trifle, scooping out the parts of the custard that are set nicely and layering with whipped cream and crumbled cookies or a simple streusel. Dori Greenspan just answered this question on the live Splendid Table show this am. She gave the Julia Child answer: scoop out the center and fill it with whipped cream.
