A question about a recipe: Roasted Sugar

I have a question about the recipe "Roasted Sugar" from Stella Parks. Can I toast extra fine sugar the same way or will it require less time? More stirring?

It should toast just fine! I haven't done any side by side comparisons of different granulation types, but since under-stirring is a common problem I'd definitely recommend stirring frequently and thoroughly as you go.
